The Science Behind Fermented Veggies

Grass-eating ungulates (mammals with hooves) have a symbiotic relationship with the microbiota in their rumen (the first chamber of their 4-chamber stomachs) by virtue of the fact that the microbiota in the rumen stimulate fermentation, which breaks down cellulose and produces volatile short-chain fatty acids (SCFA) like acetate, butyrate, propionate and other substances that facilitate metabolism and immunity. SCFAs are important sources of energy. They also stimulate the growth of intestinal epithelial cells that play important roles in the digestion of food, absorption of nutrients and protection from microbial infections, based on having properties that apparently inhibit the growth of pathogens. Acetate induces beneficial modulation to intestinal permeability (reduces leaky gut syndrome), which reduces the damage created by intestinal endotoxins (toxins released from inside a bacterial cell when it disintegrates). Butyrate helps prevent colitis by minimizing the oxidative damage to DNA and (by) inducing the death of cells that sustain DNA damage. Propionate is a major microbial fermentation metabolite (substance necessary for metabolism).
